A harvest stage, not a colour genotype
Green bell pepper is fruit picked before it colours. Every green pepper belongs to a cultivar with its own genetic ripe colour, and picking green is a commercial decision to take the fruit early rather than a property of the plant. The distinction matters because a crop planned as green still has to be recorded against its ripe-colour genotype, and confusing the two is the most common error in pepper project briefs.
What the crop needs
The plant is long-cycle on substrate and high wire under the block-pepper reference. Harvesting green releases the plant earlier, which changes the rhythm of set and the total number of picks across a season. The climate requirement is the same as for a ripe-coloured crop; what changes is the timing of the load the plant carries.
What the greenhouse has to do
Harvesting green releases the plant earlier, and that changes what the house has to carry. Fruit leaves before the colouring weeks, so the same structure and the same climate envelope turn over faster. Heating and screening are specified against a shorter occupancy per fruit, and the harvest rhythm the labour plan is built around is quicker and more regular than a ripe-colour crop’s.
The plant underneath is unchanged. It is a long-cycle block pepper on a high wire, set-sensitive in the same way, needing the same steadiness through the setting weeks. What a green crop asks for on top is a house that can turn a faster harvest into a faster pack line, because the fruit arrives sooner and in a tighter rhythm.
DutchGreenhouses® specifies the structure, climate, screening and irrigation around the pepper crop, its harvest stage and the local climate, so an early harvest rhythm is supported rather than improvised. Get in touch to plan a pepper greenhouse.
Other sweet pepper types and the systems behind them
Red bell peppers
The Dutch block-pepper baseline, carried to ripe colour.
Yellow bell peppers
A separate genotype class, not a shade of red.
Orange bell peppers
A separate genotype class, not a shade of red.
Climate
Heating, cooling, humidity control and carbon dioxide dosing.
Hydroponics
Substrate growing with drip supply and drain recirculation.
Green bell pepper, asked and answered
Is green pepper a different plant from red?
No. It is fruit harvested before colouring. The plant belongs to a cultivar with its own ripe colour, which is recorded separately from the stage it is picked at.
What does an early harvest change in the greenhouse?
The turnover. Fruit leaves before the colouring weeks, so the same house carries a faster, more regular harvest rhythm, and the pack line and the labour plan are sized for that rather than for a ripe-colour crop.
Why record the genetic ripe colour on a green crop?
Because the cultivar behaves according to its genotype, not according to the stage it is picked at. A record that omits it cannot be compared with anything later.
Crop data
Green bell peppers — reference values
Reference values from the DutchGreenhouses crop model, each traced to its Dutch source below. Ranges describe published practice across systems and seasons; a project setpoint is calculated for the actual greenhouse, crop and climate.
Where these come from
- Kas als Energiebron / WUR, 2025, project 24004 — Minimal-CO₂ fossil-free block pepper. One red block-pepper crop and strategy; production, drain and CO₂ values are observed outcomes, not optima.
- Kas als Energiebron / WUR, 2024, project 22014 — Resilient fossil-free block pepper. One full-season unlit crop with rockwool and wood-fibre substrate treatments.
- WUR, 2017, GTB-1434 — Energy-efficient pepper with crop balance. One system and cultivar; relation is a dynamic tested strategy, not a transferable coefficient.
These are reference values, not a specification. DutchGreenhouses does not publish project setpoints; those are calculated per greenhouse, crop and location.
