A fast leafy crop where the growing system is the first decision

Spinach is a short-cycle leafy green with steady year-round demand, most of it in the washed and packed baby-leaf channel. That market rewards uniform young leaf and punishes anything coarse or bolted, so the commercial question is less about total mass than about holding the crop in the right window and clearing it on time.

The crop is fast and shallow-rooted, and it responds sharply to day length and to temperature at the end of the cycle. Bolting is the failure mode that matters, and it is triggered by conditions rather than by age, which is why climate control does more for grade here than nutrition does.

The growing system is the first decision and it drives everything after it. Gutters, moving benches and deep water culture each imply a different planting density, water treatment and harvest method, and the building envelope follows all three. A house laid out for one of them does not convert cheaply into another, which is why the system belongs in the brief rather than in the fit-out.
