What the crop needs
The crop is grown on rockwool with drip irrigation and drain recirculation. Greenhouse eggplant is sold on its skin. A dark, unmarked, glossy surface is the grade, and the nutrition on the plate is not what a buyer is choosing between. Everything about the journey works against the skin: it bruises against structure, against crates and against other fruit, and a mark that shows up days after packing was made at a moment nobody recorded.
Distance multiplies the handling. Each extra transfer, each day of vibration and each warm hour adds another chance for the surface to dull or the flesh to soften under it. The fruit is not spoiled. It simply drops a grade, and the loss lands on whoever is holding it at the end.
Growing close to the market removes most of that handling rather than managing it. Fewer transfers, fewer days and delivery inside the same week keep the fruit in the state it left the plant in. A long-cycle crop under glass supplies at that standard continuously, which is what a buyer specifying eggplant is actually buying: the same fruit, in the same condition, every week of the year.
