Beef tomatoes are the large-fruited slicing class, sold as single fruit rather than as a cluster. The plant carries fewer, far heavier fruit per truss, grown long-cycle on substrate and high wire, with crop wire load and uninterrupted water supply during fruit filling as the defining demands on the house.

Beef tomato is the large-fruited class, sold as single fruit rather than as a cluster and bought for slicing. The truss structure is different from truss tomato: fewer fruit, each far heavier, and the plant carries that load differently. It remains commercially relevant across several European and Middle Eastern markets, and it is a common request in project briefs.

## What the crop needs

    The crop is long-cycle on substrate and high wire, with the same structural requirements as other high-wire tomato. Its distinguishing demand is the load a single truss places on the plant and on the crop wire, and the corresponding sensitivity to anything that interrupts water supply while a heavy fruit is filling. Fruit quality problems in this class tend to originate in the root zone rather than in the air.

## What the greenhouse has to do

    Beef tomato puts more load in fewer places, and the house is specified for that. The crop wire and the supporting structure carry heavy trusses through a long season, so mechanical margin counts for more here than it does with a small-fruited crop. Irrigation is sized for the heaviest fruit-filling week rather than for average use: drip capacity, buffer volume and drain recirculation all follow the peak.

Climate work concentrates on holding the transpiration balance a large fruit depends on. Heating, screening and humidity control do that together, and air movement through a dense canopy is part of the same specification rather than a separate system added later.

## Judged the moment it is cut open

        Beef tomato is bought whole and cut at the point of use. The interior is the product. The buyer sees the flesh, the cavities and the wall of the fruit the moment the knife goes through, and the outside of the tomato says little about what is behind it.

That interior is built on the plant while the fruit fills, and it is the first thing a long chain costs. A large fruit picked before it is finished takes on colour in transit but not flesh, and the difference shows on the cut face. Vitamin C and potassium run on the same schedule; both are laid down while the fruit is still attached.

Growing near the market lets the fruit stay on the plant until it is done. One tomato covers a whole sandwich or a whole plate, so the gap between fruit ripened on the vine and fruit ripened in a crate is not spread thin across a meal. It is the whole of what is tasted.
