## A leaf measured in days

        Spinach earns its place on a plate for what sits in the leaf rather than for what it weighs. Vitamin C, potassium and folate are the reasons the crop is eaten. None of them are stable once the leaf is cut, and spinach reaches the table raw more often than cooked, so what the leaf still holds is what gets eaten.

A cut leaf keeps losing from the moment it leaves the plant. Cold slows that; distance undoes the cold. Every transfer, every day on a pallet and every warm loading bay takes a little more, and none of it shows. Leaf that has travelled far looks the same as leaf cut that morning and carries less.

That is the argument for growing spinach near the people eating it.
